Reception Dinner
Buffet :
ICED SALAD BARS INCLUDE:
A crisp mix of baby frisee, radicchio, endive, red leaf, lolla rosa, romaine and California arugula lettuce , garnished with toasted pine nuts, tomatoes, cucumbers, and Bermuda onion served with a fresh raspberry vinaigrette dressing, and creamy ranch dressing.
Our signature home made salad of petite baby whole shrimp and flaked crab meat in a light dressing with fresh lemon, fine diced celery, shallots, and crushed macadamia nuts.
With tri flavored beet, carrot and spinach flavored rotini pasta in a light marinade of Jamaican spice, red wine vinegar and extra virgin olive oil. Garnished with ripe olives, pepperoncini, mild green bell and red peppers, and shredded parmesano- reggiano cheese.
HOT BUFFET INCLUDES:
U.S.D.A. black angus, dry rubbed with fresh herbs and seasonings slow roasted and carved to order for each guest. Served with a mild horseradish sauce and natural au jus.
Boneless skinless breasts of chicken held in our teriyaki marinade overnight then mesquite broiled and basted with a light glaze. Served on a bed of saffron rice pilaf.
A combination of fresh broccoli, cauliflower, carrots, yellow squash and zucchini steamed and topped with a lightly seasoned butter sauce.
Baby "b" sized red potatoes, wedge cut then oven roasted with seasoned butter and fresh chopped rosemary.
Assorted dinner rolls and petite croissants with individual butters.

Here we have suggested our most popular dinner reception buffet. Of course we can provide any additional amenities or substitute any menu items that you request.
In addition we are able to provide formal china and crystal service for guests. Included are matching salad and dinner plates, coffee cups and saucers, crystal water goblets, ice water carafes, steak knives and silverware service with white linen napkins and white linen cloths for guest tables.
